One Pot Cod Over Zoodles
First, pick your protein such as cod, salmon, shrimp, tofu, or chicken. Then make sure you have these 3 ingredients: a can of stewed tomatoes (I did no added salt), a can of artichokes and a cup of tomato sauce. After seasoning the cod with a little salt and pepper, I cooked it with a little olive oil in a nonstick pan and removed it. I then added the red sauce, stewed tomatoes and artichokes and let cook and simmer for about ten minutes. I added the cod back in for a minute or two just to heat back up and absorb some of the yummy favor. I chose to serve this over "zoodles" but it would be excellent over any vegetable such as spinach or a starch like quinoa. I sprinkled a little parmesan cheese on top for added flavor. Feel free to play with this recipe and make it your own. For example, I may add capers and olives the next time or mushrooms. You can use fresh tomatoes rather than canned too. Enjoy!
