One Pot Cod over Zoodles
This is one of my favorite meals. It's healthy, easy, and quick and tastes gourmet. First, pick your protein such as cod, salmon, shrimp, tofu, or chicken. Then make sure you have these 3 ingredients: a can of stewed tomatoes (I did no added salt), a can of artichokes and a cup of tomatoe sause. After seasoning the cod with a little salt and pepper, I cooked it with a little olive oil in a nonstick pan and removed it. I then added the red sause, stewed tomatoes and artichokes and let cook and simmer for about ten minutes. I added the cod back in for a minute or two just to heat back up and absorb some of the yummy favor. I chose to serve this over "zoodles" but it would be excellent over any vegetable such as spinach or a starch like quinoa. I sprinkled a little parmesan cheese on top for added flavor. Feel free to play with this recipe and make it your own. For example, I may add capers and olives the next time or mushrooms. You can use fresh tomatoes rather than canned too. Enjoy!
